2011 Moraine Park Culinary Arts Gourmet Dinner features celebrity chefs

The Moraine Park Foundation is once again planning an evening of elegant dining and rich wine pairings as the Culinary Arts faculty and students prepare an amazing spread of unique and flavorful dishes featuring the 2011 theme, “Spring Fusion.” Adding a new twist to this year’s event, the team has invited “celebrity chefs” to work alongside the talented Moraine Park faculty and students in the kitchen.

The annual gourmet dinner benefits the Moraine Park Foundation’s general scholarship fund and will be held on Saturday, April 16, from 6 to 10 p.m. on Moraine Park’s Fond du Lac campus.

The special gourmet dinner guest chefs include Tony Barthuly, Fond du Lac chief of police; Allen Polachowski of Diversified Services Management, Inc., in West Bend; Jeff Szulkalski of Jeff’s Spirits on Main in West Bend; Tom Kennedy, mayor of Beaver Dam; and Denise Fitzsimmons of Inspire Magazine in Beaver Dam.

Appetizers, wine tasting and entertainment will begin at 6 p.m. with dinner at 7:30 p.m. The menu includes chilled house-prepared duck sausage with spicy apricot marmalade, a shrimp cocktail burrito with avocado and black bean coulis appetizer, chilled creamed spring onion soup with spring onion and candied almonds, salad of micro greens, watercress and warm goat cheese with lime agrodolce, cherry and thyme popsicle, an entrée of curry blackened beef tenderloin with radish demi and chili, accompanied by spring vegetables and potatoes. Dessert will consist of a variety of small items presented for all to share at the table including: lemon curd tartlets, chocolate mint mousse cake with sweet risotto, cream puff swans, raspberry crème brulee macaroons and shaum tortes with parfait.
